This is a simple, easy version of vegetarian japchae that cuts down a lot of the prep and cook time.

Here I incorporated those into traditionally Vietnamese fresh spring rolls, replacing the usual vermicelli noodles. I also added some of the sweet and savory flavors of Japchae in the form of a tofu marinade.
